First Course - Classic onion soup - onions, chicken broth, croutons and Gruyere

Second Course - Canard A L'Orange - Hudson Valley duck confit, roasted beets, haricots verts, orange glaze

Third Course - Pot De Creme au Chocolat - chocolate custard, Espelette pepper



Instructions

First Course - salamander would be ideal to melt the cheese like a "gratin", or oven at 350 for 10-12mins.

Second Course - microwave or sauté pan (only use the duck fat. No oil, no butter needed). Add the sauce last (room temperature or warm, not too hot)

Each cocktail has been created by the chef to best complement their Supper Club menu. Each wine & beer offering has been carefully curated to do the same. Beverages will be available for purchase every Monday until midnight for delivery with the coming week's meal.

A blend of Tempranillo and Viura, it’s not as heavy as classic Rioja wines because of the specific soil and climate of the vineyard and the cement tank maturation, which makes it very special, kinda like a Beaujolais from Spain! with a fruit driven freshness and spiciness, to pair with the duck without overpowering the food. The thirsty choice.

From Cahors, South West France - The grape is Malbec, like most wines from Cahors. Duck confit is a traditional dish of the region, so this wine is naturally a good pairing, with a full body, ripe juicy fruit and airy tannins. The "farm to table" choice, a pure expression of terroir by winemaker Fabien Jouves. Gets even better as it opens up!

From Penedés, Catalunya, Spain - The grape is the native Subira Parent, an old clone of Malvasia. A bit funky and nicely oxidative, zippy acidity, orange peel note, grapefruit salinity and fresh aromatic with a medium body that will pair well with the duck confit. A more original choice (also lighter in alcohol) or for those who just prefer white wine!

From Burgundy - A natural but classic style elegant Pinot Noir, with a great nose, a touch earthy and sanguine, medium to full body and some cherry notes that will pair well with the duck flavors. The noble choice. Ideally give it a little time to breathe.
