Instructions First Course - salamander would be ideal to melt the cheese like a "gratin", or oven at 350 for 10-12mins. Second Course - microwave or sauté pan (only use the duck fat. No oil, no butter needed). Add the sauce last (room temperature or warm, not too hot)
